This is because it’s winter and that’s what happens to 100 % natural honey in the cold. To restore your Bellmere Honey to its former state, gently heat it (not in a microwave or immersing the jar in a bowl of boiling water), until the consistency returns to normal.
At Bellmere, we don’t pasteurise our honey which many supermarket honey brands will do, as it destroys the antioxidants present. So store your honey in a pantry, not the fridge.
By law, all foodstuffs sold in Australia have to a use-by date. Having said that, if you keep the jar in an airtight food-grade container, it will last indefinitely.
We would recommend not giving honey to children under 12 months of age due to the potential risk of contracting infant botulism. It’s possible that a child could ingest Clostridium botulinum bacteria or spores, which are found in dirt and dust and can occasionally, contaminate honey. Older children and adults are not affected by them because their gut has developed sufficiently. It is best to seek a doctors’ advice if you have any concerns.

Furthermore, Bellmere honey is pure and naturally produced by our bees gathering nectar from plants and flowers, stored in the beehive and allowed to fully ripen and mature by the bees in the hive. Like any 100% natural product, your Bellmere Honey can have some tiny differences in colour, taste and consistency across different harvests. Seasonal differences mean that there can naturally be slightly different colour and flavour characteristics from each beehive. We think of honey very much like fine wine. The complexities of each honey harvest change depending on the conditions. Each harvest is unique, reflecting nectar and pollen source.
